Sauteed Spaghetti Squash

Precooking the squash for a minute or two will make cutting easier.

Featuring the following Elzinga plants:
1 Small Fresh Flavor™ Spaghetti Squash
1 tablespoon margarine
1 cup chopped Fresh Flavor™ Onion
1 clove minced garlic
1 teaspoon Fresh Flavor™ Oregano
½ teaspoon salt
¼ teaspoon pepper
Directions
1. Wash squash; cut in half lengthwise. Remove seeds.
2. Place squash meat-side down in a baking dish with 2 inches of water, cover and cook for appx. 30 minutes, until meat is tender.
3. Remove squash and cool. Remove squash with a fork in spaghetti-like strands.
4. Melt margarine in a skillet over medium-high heat.
5. Add onion and garlic; sauté just until onion is tender.
6. Add oregano, salt and pepper; stir well.
7. Add warm squash; toss gently.
8. Serve.
