Salmon with Mango Salsa

Salmon is healthy and when topped with fresh salsa can be a real treat!

Featuring the following Elzinga plants:
Salsa
1 Ripe mango, peeled and cut in bite size pieces
½ c Chopped Fresh Flavors™ red bell pepper
½ c Chopped red onion
3 tbsp Lime juice
2 tbsp Chopped Fresh Flavors™ mint
1 tbsp Finely chopped Fresh Flavors™ jalapeno pepper
Salmon
¼ c Lemon juice
½ tsp Papika
2 1lb Salmon fillets
1 tbsp Olive oil

Directions
Toss all salsa ingredients in a bowl, add salt and pepper to taste. Chill at least an hour to blend flavors.

Combine lemon juice and paprika in shallow baking dish, season with salt and pepper. Add salmon and marinate for 1 hour. Flip to cover each side.

After 1 hour remove fillets and discard marinade. Heat oil over medium-high heat. Sear salmon on each side for about 15 minutes, until opaque.

Serve with salsa on top.
