Vegetable Coleslaw

A twist on traditional coleslaw, this refreshing side dish tastes great with something off the grill.

Featuring the following Elzinga plants:
1 ½ c shredded red cabbage
1 c shredded carrot
¾ c shredded Fresh Flavor™ yellow squash
¾ c shredded Fresh Flavor™ zucchini
½ c chopped Fresh Flavor™ green pepper
1/3 c finely chopped onion
¼ c unsweetened pineapple juice
1½ tbs sugar
3 tbs cider vinegar
2 tbs water
½ tsp chicken bouillon granules
¼ tsp paprika
¼ tsp celery seed
1/8 tsp garlic powder
Dash of ground red pepper
Directions
Combine first 6 ingredients in a large bowl. Combine pineapple juice and remaining ingredients in a bowl, stirring well. Pour over vegetable mixture; toss gently. Cover and chill at least 4 hours.
