Feta Shrimp

A nice light appetizer. Want to save time? Use precooked, deveined shrimp.

Featuring the following Elzinga plants:
32 medium size unpeeled fresh shrimp
3 c water
16 Asian Flavor™ sugar peas
¼ c peeled, shredded Fresh Flavor™ Cucumber
¼ c reduced calorie mayonnaise
¼ c nonfat sour cream
2 tbs grated onion
1 tbs lemon juice
2 tsp minced Fresh Flavor™ dillweed
2 oz feta cheese, crumbled
Directions
Peel and devein shrimp, leaving tails intact. Bring water to a boil in a large saucepan; add shrimp, and cook 3-5 minutes or until shrimp turn pink. Drain well; rinse with cold water, and drain again. Chill thoroughly.

Wash peas; trim ends and remove strings. Arrange peas in vegetable steamer over boiling water. Cover and steam 1 minute. Drain well, and chill thoroughly.

Separate each pea lengthwise into 2 pieces. Wrap a pea around each shrimp, and secure each with a wooden pick. Cover and chill thoroughly.

Press cucumber between paper towels until barely moist. Combine cucumber, mayonnaise and remaining ingredients in a small bowl, stirring well. Cover and chill thoroughly.

Arrange shrimp on a serving platter, and serve with mayonnaise mixture.
