Grilled Veggie Kabobs on Rice

Your Fresh Flavor™ garden should contain most of the ingredients you need for this delicious, light summer recipe.

Featuring the following Elzinga plants:
½ cup oil-free Italian dressing
1 tablespoon minced Fresh Flavor™ Parsley
1 teaspoon Fresh Flavor™ Basil
2 medium Fresh Flavor™ Yellow Summer Squash, sliced
1 Fresh Flavor™ Spanish Onion, cut in 1 inch pieces
8 Fresh Flavor™ Cherry Tomatoes
8 medium fresh mushrooms
Vegetable cooking spray
2 cups of herbed rice (see Herbed Rice Pilaf recipe on our website)
Directions
1. Combine dressing, parsley, and basil in a small bowl; cover and chill.
2. Put squash, onions, tomatoes and mushrooms on skewers, alternating each vegetable until skewer is full.
3. Spray grill rack with cooking spray; put over medium hot coals.
4. Place kabobs on rack, cook 15 minutes or until tender, while turning and basting with dressing.
5. Serve on top of Herbed Rice Pilaf
